These healthy bundt cake bites are so so good and guilt free which makes them even better!!
Wahoo!! Snow day! I will take full advantage of this day to bake, cook and play with my family!
I wanted to make something sweet and special for breakfast…thinking donuts but trying to stick to a healthier option while still being delicious!
Healthy Bundt Cake Bites
What we need
– 2 cups flour
– 3/4 cup sugar
– 2 teaspoons of baking powder
– 1/4 teaspoon ground all spice
– 1/4 teaspoon ground cinnamon
– 1 teaspoon of salt
– 3/4 cup milk (I like almond milk)
– 2 eggs (beaten)
– 2 teaspoons of vanilla extract
– 1 tablespoon of melted butter
Glaze
– 1 cup of confectionery sugar
– 2 tablespoons of hot water
– 1/2 teaspoon of almond extract
How we do it…
Step 1
Preheat oven to 325 degrees. Grease muffin tin.
Step 2
Mix all dry ingredients. (2 cups flour, 3/4 cup sugar, 2 tsp baking powder, 1/4 tsp ground all spice, 1/4 tsp ground cinnamon, 1 tsp salt)
Step 3
Add to the dry mixture 2 beaten eggs, 3/4 milk, 2 tsp vanilla extract, 1 tablespoon of melted butter
TIP- Add the melted butter last… after mixing all other ingredients together.
Step 4
Fill muffin tins 3/4 of the way
Bake for 20 minutes
Step 5
While muffins are baking, lets make the delicious glaze.
Mix together 1 cup confectionery sugar, 2 tablespoons of hot water, and 1/2 tsp of almond extract.
Step 6
Allow cakes to slightly cool before taking out of tin. Then use cookie presses to make mini bundt cake bites.
Cut cakes in half.
Step 7
Dip bundt cake bites in glaze and enjoy!
