Another day, another snow day.
We bundled up and played in the fresh snowflakes. Especially catching and eating them!
We took a walk in the winter wonderland.
Although, we didn’t do any sledding, we did enjoy the nice fresh air.
We also tried out a new recipe that was inspired from https://www.facebook.com/ChefClubItalia/
A while ago, I saw a video for this recipe and wanted to try it. So today was the perfect day!
Grilled eggplant stuffed with fresh mozzarella and prosciutto. Then wrapped in spaghetti and baked to perfection.
It was sooooo delicious! I was too busy eating to snap a picture after I cut it open!
Then of course we had to finish up with some chocolate covered desserts!
Everyone had a good night sleep from all the fresh air and the yummy treats! Oh happy day for mama 🙂
