Leftover pulled pork recipe turned to Asian style meatballs
So I’m whipping up a quick recipe to using leftover pork.
I made a bunch of pulled pork in the crockpot for dinner the other night…but now I have so much leftover and I need to transform it!!
I love making all types of “meatballs,” I love to do turkey balls, spinach balls, etc. Especially because you can get some extra veggies in there too!!
Leftover pulled pork recipe turned to Asian style meatballs
For the sauce:
1 tablespoon sesame oil
1/2 cup soy sauce
I tablespoon lemon juice
3 tablespoons water
1 tablespoon sriracha
1 tablespoon fresh grated ginger
Combine all and let simmer lightly for 15 to 20 mins.
Then add
1 tablespoon cornstarch
1 tablespoon water
Bring to boil. Then lower and wait until thickens.
For the balls
Approximately 3 cups of cooked shredded pork
1 carrot shredded
2 eggs
Mix and make balls!
Bake at 350 for 15 minutes. Flip. Then cook for 15 more. I try to give mine a little crunch. Yum.
Top with sauce and serve with rice.

*I think next time I would do one egg instead of 2 for a more firm meatball… but it depends how you like it. Either way this is a melt in your mouth recipe!*
