
Attention spinach lovers. I have the perfect recipe for you. And an excuse to eat a bowl of pasta.

Who doesn’t love a good alfredo sauce. So rich and creamy but such a belly bomber. I always end up feeling full and sick after. I have tried many times to do the healthy alternatives such as cauliflower “alfredo” sauce. And it just never tastes close to the same.
The texture and thickness of this spinach pesto is the closest I have gotten!! So delicious and you can feel less guilty about the carbs because of all the good spinach inside.
I also like this recipe because there is so much potential to make it even more guilt free. Adding less oil and more water. But the recipe I am sharing seems to be the best! I wish I had some veggie spaghetti on hand but I went with the classic fettuccine. OMG YUM.
Easy Spinach Pesto Pasta in 30 minutes or less
What we need:
- 2 bags of spinach
- 5 cloves of garlic
- one box of fettuccine (or spaghetti)
- 3 tablespoons of extra virgin olive oil
- 3 tablespoons of water
- salt and pepper

What to do:
- Get 2 big pots of water boiling and season with salt.
- In the first pot, throw in 2 bags of spinach. Mix and let cook for 2 minutes. Drain and set aside.
- In a food processor or blender, puree 5 cloves (or less if you are not a big garlic person) and cooked spinach. Season with salt and pepper. Add 3 tablespoons or extra virgin olive oil and 3 tablespoons of water and blend until smooth.


- Add pasta to other pot of boiling water, and cook for 11-12 minutes or according to box directions..
- Drain pasta and add pesto mixture to hot pasta. Toss well.
- Serve and enjoy 🙂

I like to serve with a little Parmesan cheese. Garnished with a few cherry tomatoes for a little color! I tried to be fancy with a drizzle of extra virgin olive oil.

I made this in hopes of getting some spinach into my picky little eater. It was a no go. Maybe next time.
This is a great recipe for a busy day and last minute dinner idea. Done in less than 30 minutes. Can’t beat that 😉
