Going to be a quick one today.
Me and the little man have a lot of errands to run including going to pick up this week’s menu supplies.
What’s on the Menu Monday III
Sunday – Shrimp Rice Bowls – I wanted to do like a protein power bowl. But actually, we ended up making spinach linguini to go with our shrimp. (Something I knew the picky little boy would eat.) We saved the rice for our lunches today instead.
Monday – Baked chicken legs served with baked potatoes and corn. My girl lovessss her “chicken on the bone” as she calls it.
Tuesday – Chicken Caesar Salads. I definitely feel like I have been slacking off on the healthy eating so we will be doing a lot more green this week! Not a real big fan of caesar dressing, (making it for the husband) so I’ll probably do some olive oil and lemon on my salad!
Wednesday – Tuna Melts and chopped cucumbers on the side. – I love skipping the mayo in my tuna by making it a melt with a little cheese instead. Quick and easy is the theme this week and a small shopping list.
Thursday – Meatloaf – Probably served with some sauteed mushrooms and broccoli on the side. We haven’t had this in the longest time and trying to think of new things!
Friday – French Toast with some fresh strawberries and blueberries. I am liking the breakfast for dinner too.
Saturday – Panini’s – served with spinach on the side. I have no idea what kind of sandwiches we are actually going to make but I do know it will involve melted cheese on a delicious crispy panini.
I think it is time to get back on the grill. Where is my spring weather? I am ready to picnic.
