I know, I know, it’s corned beef and we had corned beef and cabbage for St. Patrick’s Day!
Here’s our proposed menu for the week.
What’s on the Menu Monday IV
Sunday – Corned Beef , cabbage and potatoes. Of course, irish soda bread to complete the meal. Happy St. Patrick’s Day!
Monday – Greek Salad Bowls – I have been craving a Greek salad in the worst way. I absolutely love tzatziki sauce. OMG. Lettuce, tomato, feta cheese, cucumber, and some grilled chicken on top.
Tuesday – Tortilla Soup – Thankfully, soup nights will soon be far and few between with the warmer weather coming. We love this soup because you can top it with shredded cheese, avocado, sour cream and of course some tortilla chips! I try to recreate this recipe which is a specialty made by RitasWoodenSpoon.
Wednesday – Tacos – There is never a wrong time for tacos. Make a little rice on the side.
Thursday – DIY Potato Bar – I am going to bake some potatoes and then make a bunch of toppings. Definitely going to make some sauteed mushrooms, and broccoli. Feel free to go as crazy as you want. Top it with bacon, cheese, or just some sauteed veggies. It’s a great way to spruce up dinner!
Friday – Veggie Pasta – I love veggie pasta but I am also going to top it with extra veggies. Baked asparagus is one of my favorite to mix with veggie spaghetti.
Saturday – BBQ – It’s almost grilling season. WAHOO. I am thinking about grilling some chicken. Pair it with this delicious and easy eggplant appetizer on the grill.
