I am feeling a little lazy on this cold Monday! April’s fool’s got me again because I thought it was supposed to be SPRING!
Sunday – Shredded Chicken and Rice – I made few chicken breasts in my new stove top cookware. I put a little bit of water and southwest seasonings and let it cook until it was easy to shred. For a side, I had some leftover corn so I sauteed it and made it into a mixed rice dish.
Monday – Ginger Zucchini – I realized I had 3 beautiful zucchini in my fridge that I didn’t use last week. I love to grill it and then make a ginger and soy sauce dipping sauce. Since it was freezing again today I sauteed the zucchini instead. Still delicious! Would be great to serve over some ground turkey!!
Tuesday – Avocado Egg Wraps – We dyed Easter eggs this weekend so I have a lot of boiled eggs that need to be eaten . We will use some of these to make an egg salad using avocado instead of mayo. Throw it into a whole wheat tortilla wrap and dinner is done!

Wednesday – Stir Fry – I love a good one pot meal so stir fry is perfect for this. Throw all the veggies into a big pan and season how you like it. For the protein, I am going to make it a tofu stir fry! We haven’t had tofu in a while and I’m hoping the kiddies will like it. Thursday – Orange Chicken – Well it looks like I am on an Asian kick this week because somehow I got to thinking about orange chicken. I am going to try to make this in the crockpot! I am going to cube some chicken and throw it into the crockpot with some garlic, orange marmalade, orange juice, a little bit of salt, pepper and red pepper flakes! Perfect to serve with broccoli and brown rice.
Friday – Grilled Cheese – I love a quick meal on Fridays to kick off the “relaxation” of a weekend. Everyone likes it, especially me 🙂 We’ll have some carrots and dip on the side to make us feel a little healthier too.
Saturday – Free Day – YAYYYYY. No idea what it’s going to be. I can’t stop laughing because it’s only Monday and I’m already relieved I don’t have to cook on Saturday!! HAHA
