
Warm weather means the grill is coming out of retirement. I am always trying to change things up and make new things. Especially, when I find a new food that my little picky eater likes. Which is what inspired my “fried rice” couscous. Little man liked plain couscous so I am going to sneak in a few other ingredients.
What’s on the Menu Monday VII
Sunday – Bean Burgers – Served with sliced avocado and tomatoes.
Monday – “Fried Rice” Couscous – First, I sauteed some chopped celery, carrots, and broccoli with some salt, pepper and a little bit of olive oil. Then added some ground turkey and sauteed that all together. Added a scrambled egg and then mixed in the already cooked couscous. I added little water and soy sauce. Honestly, it did not come out as fried rice consistency, it was more like stuffing but really delicious!!!
Tuesday – Breaded Pork Chops – I am going to bread some pork chops and bake them in the oven. Served with baked potatoes and corn.
Wednesday – Broccoli and Dip, Guacamole and Sweet Potato Chips, and Cucumber Salad – These are actually my favorite kind of nights! If you have time to try these 6-ingredient-spinach-tots/
Thursday – Lasagna Roll Ups – I am not doing the classic lasagna… Going to do some ground turkey, chopped tomatoes and cheddar cheese.
Friday – Ramen and Eggs – Noodles are always a favorite in our house. I throw in some eggs for a little extra!
Saturday – Stuffed Chicken with Spinach and Mozzarella – Served with a salad. Because well, cheese makes everything more yummy.
