
Sunday – Happy Mother’s Day!! – There is no shame in my take out game. I enjoyed some Chinese food in my sweatpants in the comfort of my home 😉
Monday – STOUP – It is a cold and rainy day here so I figured a nice stew/soup would be perfect. I started the pot by sauteing some onions and then adding a can of diced tomatoes, a can of kidney beans, a can of creamed corn, and a packet of fajitas seasoning. I am letting that cook on low all day long.
Tuesday – Bean Tortillas – Okay grab some whole wheat tortillas and some cheddar cheese! We are filling these tortillas with the stoup from yesterday and topping with cheddar cheese. Fold them over and bake in the oven!! I love revamping leftovers!
Wednesday – Egg Sandwiches – So I know this sounds pretty boring but I made my own fresh baked homemade bagels!

I froze some the same day to keep them fresh and we will be making our egg sandwiches on a delicious bagel. Also, its National Chocolate Chip Day, so here is a fun dessert recipe… brownie-bottom-chocolate-chip-cheesecake
Thursday – Veggie Pasta – Make some garlic and olive oil spinach, and mix that into some veggie pasta. Top with fresh tomatoes and Parmesan cheese.
Friday – Kale Pizza – It is National Pizza Party Day. So I am sharing one of my favorite pizza recipes. guilt-free-kale-pizza-crust
Saturday – Shrimp Sheet Pan – Another quick and easy dinner idea. Salt and pepper some shrimp and asparagus and toss in olive oil. Bake in the oven and serve with yellow rice.
