Menu XI.

It’s officially grilling season. That means fresh dinner ideas. This week’s menu is inspired by all the options that the grill brings. Food cooked on the grill has a different taste and there are no limits. Meats, vegetables, and even fruit makes for an amazing dessert! The best part about using the grill is the easy cleanup. Here is one of my favorite starter recipes… eggplant-appetizer-grill

Sunday – Pork Chops – I threw these on the grill with just a little bit of salt and pepper. For a side, I put a bunch of mini peppers on the grill with them. Serve them with sweet potatoes wrapped in foil whole or chopped up on a sheet pan.
Monday – BLT – This is a fast weeknight dinner. Turkey bacon is a hit in our house. Turkey bacon, sliced tomatoes, lettuce and a little bit of mayo on some toast. All done.
Tuesday – Pasta Salad – I feel like pasta salad is the ultimate side dish of summer. It’s perfect because you can add whatever you want in it and it is delicious. You can go as simple or fancy as you want! My favorite is, of course, the antipasto way. Chopped up cheeses, a little pepperoni or salami, olives and artichoke hearts. I usually like to keep the dressing simple with some olive oil and red vinegar. YUM.
What’s on the Menu Monday XI?
Wednesday – Kielbasa – We love the Butterball Turkey Kielbasa! Serve with sauteed cabbage. If you want you can make some homemade dipping sauces but my daughter’s favorite is ketchup!
Thursday – Steak & Fries – I love marinating my steak for a few days if I can. My latest secret ingredient for marinade is pickle juice! And for the fries, I cut up potatoes, toss them in olive oil and get them nice and crispy in the oven.
Friday – Linguini & Clams – A pasta dish is always a great way to make dinner easy. I like to keep a can of Cento clams so I can quickly make a delicious clam sauce! A great dish to add some spinach into to get a little green in there.
Saturday – BBQ Chicken – Baste, Baste, Baste. My favorite are the chicken wings and just keep slathering on the bbq sauce while they cook on the grill. Going to serve this with some raw veggies and dip!
