Menu XIII.

So the theme for this week’s dinner menu is going to be quick quick quick! Because just like this monday, I am constantly running out of time! The more shortcuts the better.
It may not be the healthiest but that is just how real life happens sometimes.. am I right?! You can make little switches here and there to make it more healthy!
Sunday – Stuffed Burgers – This was most definitely a request from the husband. I made some homemade patties with ground beef and I stuffed the burgers with pepper jack cheese! A side salad is a good way to get some greens in.
Monday- Mac and Cheese – So you probably think this is my kid’s pick…but it’s mine. I love love love to make homemade mac and cheese. I like it baked and crunchy! Serve with steamed broccoli on the side.
Tuesday – Pulled Chicken – Going to use the crock pot because it’s awesome. Throw in your choice of chicken and southwest seasoning. Let it cook all day or a few hours on high if that’s all you have. Shred, shred, shred. Grab a container of clear cole slaw from the store and that’s it!

Don’t forget to make extra so you can make eggplant parm and freeze for another day!
Thursday – Quinoa Bake – I love this recipe because it really isn’t a recipe. Prepare some quinoa and mix whatever veggies, meat, etc. that you want. Sprinkle, maybe a hearty sprinkle of your favorite cheese and bake in the oven. Also, love this because you can prepare the night before and just put in the oven when you are ready.
Friday – aka Foil Friday – This week we will be filling our foil packets with shrimp, garlic, lemon juice, a drop of olive oil, and some chopped asparagus. Make some baked potatoes on the side. Easy cleanup!
Saturday – Hotdogs – Because, SUMMER. Corn on the cob. DONE.
