Menu XIV.
WE’RE BACK! With a fresh new what’s on the menu Monday for back to school season.

The end of summer was getting a little hectic and busy so it was hard planning a menu! But I am just as ready to get back into a routine as the kiddies are!
Sunday – Chicken Stir Fry – My daughter picked out a bag of frozen stir fry vegetables on our last grocery shopping trip and I thought perfect. This is a great easy meal with yummy veggies. I am going to chop up some chicken breasts and serve with yellow rice.
Monday – Quesadillas – We love mexican food in our house. My kids even like cheese quesadillas so it’s a fun meal to serve with some black beans. Chips and salsa is always a hit at our dinner table as well.
Tuesday – Sausage and Peppers – We are going to get a few more uses out of our grill. Throw the sausage on the grill to get them nice and crispy on the outside. Slice them up and serve with some grilled peppers. And a fresh loaf of Italian bread and make some delicious sandwiches.
What’s on the Menu Monday XIV?
Wednesday – Quinoa Sushi – I was gifted a beautiful bag of sushi quinoa and could not wait to try it out. I usually use brown rice for my sushi. This quinoa was so tasty and easy to work with. You can not tell the difference. We will be making spicy kani sushi rolls and probably some cucumber rolls with it.

Thursday – Steak and Potatoes – This is a staple dinner idea in our house. I am sure I will be making some home made french fries to pair with our steaks. And definitely going to add some sauteed spinach for some green in our life.
Friday – Feta Bake – Another favorite because I can make it the night before and just pop it into the oven when it’s time for dinner. First, saute some vegetables as the base. (I do onion, celery, tomato, and carrots.) Then add some grilled protein, either chicken or shrimp, or both. Then top it with lots of feta cheese and bake in the oven.
Saturday – Blue Fish – Blue fish is a fishy fish to me so I like to marinate it for at least a day or two. I usually like to do a sweet and spicy. Honey, sriracha, red pepper flakes, a little bit of olive oil and vinegar, and a sprinkle of sugar. Let that sit for a day of two. Then pan fry the fish in this juice. Serve with brown rice and some sliced avocado.
