Mini Loaf Banana Bread or Muffins
Is baking is on your agenda this weekend? Do you love an easy breakfast recipe?
Time to make some banana bread or muffins from scratch. It’s also a very healthy recipe which is a plus.
Just double for a bigger loaf, or make some muffins!
Don’t mind my fancy recipe on construction paper and a marker. I’ve been homeschooling my littles all week.
Mini Loaf Banana Bread
What you need:
- 1 banana
- 1 egg
- 2 tablespoons sugar
- 1/2 cup flour
- 1 teaspoon baking soda
- pinch of salt
What to do:
- In one bowl mash banana and beat egg. Add cinnamon and 2 tablespoons of sugar.
- Add flour, baking soda, and salt. Mix until just combined.
- Bake at 350 degreees in greased mini loaf pan or muffin tins. Cook time varies, check with toothpick comes out wet or dry. Mini loaf – 30 minutes / Muffins – 15 minutes
