Easy Cheesy Pasta & Peas Casserole.

So I just googled what exactly makes something a casserole before I named this dish. Any food that is cooked and served in the same dish. Usually a deep dish.
I definitely made casseroles before I just wasn’t sure if it had to have a specific base or ingredient to classify it as a casserole. Because I think of my mom’s chicken and dumpling as a casserole but not so much as this pasta bake.
Which is what I am making. Plus, this is a leftover recipe. Spruced up to make another dinner.
Easy Cheesy Pasta & Peas Casserole
What we need:
- one medium onion
- one bag of frozen peas
- tri color rotini pasta (or your choice)
- shredded cheddar cheese
- olive oil
- salt, pepper, red pepper
- Parmesan cheese (optional)
So I had leftover “peas mixture” from pasta and peas dinner the other night. Super simple recipe. I didn’t want to eat it exactly the same so I figured to make a pasta bake out of it. Plus, everything is better with melted cheese.
What to do:
- Chop onion and saute in pan with olive oil, salt, and pepper. About 3 to 5 minutes.
- Add bag of frozen peas. Add a little water and more olive oil. Sprinkle more salt and pepper. And a little bit of red pepper flakes if you like them like I do!
- Let that simmer on low on the stove for at least 20 minutes.
- In the meantime, cook your pasta.
- Get out your casserole dish, combine peas mixture and cooked pasta.

6. Top with shredded cheese.
7. Bake at 350 for about 20 minutes or until cheese is melty.

I topped mine with Parmesan cheese and a drizzle of olive oil and extra red pepper flakes 🙂
