Another easy dinner recipe that you can make ahead of time and then just pop in the oven when everyone is getting hungry. Prep it the night before or even in the morning.

So I meal prepped the other day for the first time in forever. I baked a big spaghetti squash. The first day I ate it with some Parmesan cheese and olive oil on top. Which was delicious, but I didn’t want to eat the entire spaghetti squash like that.

This started out as a spaghetti squash bake. But currently, I am the only one who eats spaghetti squash in the house so I added spinach to this recipe. And shrimp.

Spaghetti Squash, Spinach and Shrimp Bake

What you need:

  • baked spaghetti squash
  • sauteed spinach
  • shrimp
  • pepperjack cheese
  • salt, pepper, olive oil
  • pasta (optional)

What to do:

  1. First saute the spinach and set aside.
  2. Saute shrimp and set aside.
  3. Cut spaghetti squash in half. Salt, pepper and olive oil on each side. Flip facing down and bake in the oven at 350. It takes a while at least 30 mins.
  4. Then we are going to build the layers which I have shown in the pictures below.

Make a thin layer of each on separate sides.

Add shrimp.

Add pepper jack cheese.

Bake in the oven until cheese is melted.

So, I served it over spaghetti and ended up mixing it all together. Topping it with Parmesan cheese and it was delicious!
