What’s on the Menu Monday XVII?

I know it’s not Monday. But its officially summer vacation and we had a slow start to the week. So I went shopping yesterday and I started meal prepping this morning.
Sunday – Clams and yellow rice – I don’t feel like making a full on paella so I think I am going make the clams and yellow rice.
Monday – Breakfast for dinner – Another one I love doing when I can’t think of anything for dinner. Pancakes, waffles, bagels, or even just cereal and fruit depending on how the day goes lol. My son likes a lot of breakfast foods so this one is for him!
What’s on the Menu Monday XVII?
Tuesday – Chicken legs and broccoli – I woke up this morning and got these chicken legs going. I coated half in flour and spices and baked them in the oven. And for the other half, I just tossed in olive oil and spices and baked those as well. Super easy but using the oven in summer is something I try to avoid. But my daughter enjoyed having one for breakfast!
Wednesday – Chicken Marsala – So I made this a week or two ago and served it over spaghetti. My husband asked me to make it again this week. I found a great recipe on pinterest. Thank you Julia! https://www.pinterest.com/pin/87046205286020917/

Thursday – Pineapple and Chicken Kebobs served with salad – So this is what I am looking forward to the most this week. I already cut and started marinading the chicken. Love pineapple on the grill also!

Friday – Sausage Ziti Bake – Another call back favorite. Red sauce, chopped sausage, toss pasta to just coat. Top with mozzarella cheese and bake.
Saturday – Sandwiches with veggies and dip – You never know where we might be off to on the weekends. Picnics are always fun. Stuff for sandwiches and hummus and veggies are perfect for a sunny, summer Saturday.
