Spinach Artichoke Campfire Dip.

Another quickie.
I was headed off to a kids free camping trip. YUP. You read that correctly. NO KIDS. Camping trip with my husband, my brother and my sister in law.
I wanted to bring food that I could have prepped beforehand so that I could truly relax as much as possible.
Everyone knows about my chip and dip obsession so you know I had to make at least one to bring.
Spinach Artichoke Campfire Dip
This recipe is super easy because all you have to do is combine all the ingredients and top with lots and lots of cheese.

What you need:
- 3 bags of spinach
- 1 jar of artichoke hearts
- 8 oz cream cheese (room temp)
- 8 oz sour cream
- 2 cups shredded mozzarella cheese
- 1 tin with top
- more mozzarella cheese to top
What to do:
- Chop and saute spinach with a little olive oil and salt and pepper. Let cool.
- Combine all other ingredients and spinach and put in a tin.
- Top with lots of mozzarella cheese.

When ready to cook, keep tin covered and place on top of the campfire.
Tip: If the fire gets too hot too fast, take the tin off, let it rest and put it back on. Keep checking to make sure the bottom isn’t burning. When I cooked mine, I kept putting it on for a few minutes and letting it rest off the grill. I did this a few times to make sure it was nice and melty all the way through.
