ROTISSERIE CHICKEN RECIPE IDEAS
So apparently yesterday was NATIONAL ROTISSERIE CHICKEN DAY. We celebrated a day early because it is what my daughter wanted for dinner. She insists that we are “getting a turkey.” Also pictured is my son’s dinner of champions.

Does your rotisserie chicken look like this after dinner? No? Just me, okay. My daughter only likes the chicken legs and wings. She doesn’t eat the breast and my son doesn’t even look at the chicken.
I am always okay with getting a rotisserie chicken for dinner two reasons.
1. It’s an easy and fast week day dinner.
2. They are great for other recipes and cut down on the prep work.
Now I have perfectly cooked chicken to make lunches for the week.
ROTISSERIE CHICKEN RECIPE IDEAS
Here are two of my favorite leftover rotisserie chicken recipe ideas.

- Spiced up chicken salad sandwich – Shred the rotisserie chicken breast. Add a little bit of mayo, add chopped avocado, chopped green pepper, red onion, and tomatoes. Season with salt, pepper, crushed red pepper, and a little cayenne pepper too.
- Southwestern style chicken salad – Now you can make this one really easy if you already have the pre-made southwest salad kit, just top it with some of the leftover rotisserie chicken. If not, just add lettuce, shredded cheese, a crunchy topping like crushed tortilla chips.
