Cheesy Taco Spaghetti Squash

Cheesy Taco Spaghetti Squash
What you need:
- Spaghetti Squash
- Black Beans
- Taco Seasoning
- Shredded Cheddar Jack Cheese

What to do:
- Cut spaghetti squash in half. Scoop out seeds and insides. Season with salt, pepper and olive oil. Bake skin side up until tender to the touch.
- Using a fork, take all of the spaghetti squash out of skin and create a layer in a baking dish.
- Drain a can of black beans and mix with spaghetti squash.
- Sprinkle taco seasoning all over this layer and mix thoroughly until fully incorporated.
- Top with about one cup of shredded cheddar jack cheese.
- Bake until cheese is fully melted.
- Eat and enjoy!
Great vegetarian or meatless recipe. Perfect spin on healthy taco or mexican theme night. Make in advance, freeze and take out and bake recipe. One dish meal 🙂
