Since my babies are too little to carve pumpkins, I decided to use the entire pumpkin for cooking purposes. The first thing I did was cut off the top and scoop out all the seeds and inside stuff. Then I cut the pumpkin into sectioned pieces. I got a big pot of water boiling and threw the pumpkin in. Boil for about 10 minutes or until the pumpkin is soft enough to easily stick with a fork. Well here is the whole family! I am in between two car seats and Lola is riding shotgun. It's just easier this way. We were on our way to a fall festival. PUMPKIN Cheesecake Dip!
Pumpkin Cheesecake Dip is life. It's pumpkin season and I have been slacking! My second favorite time of year (after summer) is just that. Right after summer when it starts to get chilly and it is the best excuse to start baking season. Just for extra warmth in the house and the scent of anything pumpkin in the oven.
